mone that helps regulate mood, body temperature and collagen production.

1 tablespoon extra virgin olive oil
1 small red onion, chopped
1 medium yellow sweet pepper, chopped
3 cloves garlic, finely chopped
1 cup puy lentils
1 pkt tempeh cut into chunks
1 teaspoon ground cinnamon
2½ cups vegetable broth
1 medium courgette, chopped
1 medium yellow squash, chopped
1 tablespoon tomato paste
½ cup pomegranate juice
Sauté onion and bell pepper over medium heat
for 3 minutes. Add garlic and cook for 1 minute.
Stir in lentils and spices - cook for another 30 seconds. Add broth, bring to boil, simmer for 25 minutes. Add courgette, yellow squash, tomato paste, pomegranate juice and simmer for 15 minutes. Add tempeh. Season to taste.
